After a full week of birthday dinners, lots of drinking and tons of fun… I decided fuck it! One more super rich carb filled dinner with wine won’t kill me.
I saw a recipe for tomato cream sauce a long time ago and have wanted to try it ever since. I cut chicken up in tiny pieces and marinated in lemon, olive oil, salt and pepper. Then fried it in small batches over high heat and set aside. Then I sauteed garlic, onions and mushrooms in olive oil. After they were good and cooked I added in a few cans of tomato sauce and let it simmer down until it was dark and thick. Then I added a shit load of heavy cream and let it cook down even more and get thicker. I added the chicken in at the last second to get hot but not overcooked. I served it over linguine topped with parmesan and fresh chopped basil. I also made garlic bread on San Francisco sour dough with roasted garlic, butter, parmesan and paprika. This was oh so so good, but oh my god so bad.
